Cranberry Pudding

We thought we would modify this recipe using blueberries instead of cranberries. The cranberry pudding recipe came to us from our good friend Gary who raved about it when we started framing the barn during Christmas 2006. This is one of life's simple pleasures. We were not disappointed and you certainly won't be either.

Heat the oven to 400F

Ingredients:

  • 3 Tablespoons butter
  • 1 Cup sugar
  • 2 Cups flour
  • 3 teaspoons baking powder
  • 2 Cups uncooked cranberries
  • 1 Cup milk

Mix: the first four ingredients. Add milk and cranberries. Pour into a 9x9 buttered dish and bake at 400 degrees for 40 minutes.

Butter Sauce

  • 1/4 lb butter
  • 1 Cup sugar
  • 1/2 cup cream

Melt all ingredients and serve hot.
